Appassimento is a winemaking method by which grapes are dried before pressing. 50% of the grapes, mostly Corvina and Rondinella, for Alanera went through such a process and it is why it is reminiscent of the famous reds of Valpolicella and Amarone.
Time in bottle has softened its fruitiness and structure. Strong cheeses and cured meats would pair nicely.
